Sweet dreams

The noble sweet wines are a heavenly match for lovers of good food. Take a chance and try the combination of these fine wines with blue cheese, goose liver or a nice apple pie – you will understand why those wines are known as “Sweet Dreams”!

For the production of our sweet wines, we use every help nature has to offer.

For our Eiswein (icewine) it needs mainly two skills: patience and frost resistance.
Every year we wait until December for the first frost to arrive. Once the conditions are right, we go with family and friends to harvest what we have been waiting for so long. The grapes for the Eiswein are picked in the middle of ice-cold winter nights at minus 7° Celcius. The frost helps, to freeze the water in the grapes and to concentrate in this way the natural sugar content. This high sugar content in combination with the fruitiness of the selected grapes is the secret behind our Eiswein. Try a glass of it with a piece of apple pie and enjoy a sensational feeling.

The grapes for our Beerenauslese (Selection of grapes) and Trockenbeerenauslese (Selection of dry Grapes) are also not easy to get. Due to the climate around the Neusiedler See, and the very unique microclimate in the Seewinkel, we enjoy the help of nature in form of the Botrytis cinerea, also known as the noble rot. This fungus grows on the ripe grapes and drills little holes in the skin. Then gentle winds in warm autumn days make the water in the grapes evaporate and to concentrate the sugar content in the grapes.
These wines, especially the Trockenbeerenauslese (TBA) have made Illmitz known with wine lovers all over the world. We want to invite you, to try the match of a glass of one of our TBAs with foie gras, blue cheese or chocolate cake.
